Oven Baked Tilapia with Summer Tomato Salad

My family and I eat a lot of fish.  It’s a great way to make a simple healthy meal in minutes. The biggest mistake people seem to make with fish is that they over cook it. You are better off undercooking fish and having to put it back on the grill or back in the over for a minute or two then over cooking it.

This recipe is great all by itself but with the fresh tomato salad over it, it’s nothing short of amazing.  If you don’t generally like fish, this recipe could change your mind.  If you’re positive you don’t like fish, then try the tomato salad over grilled chicken or steak.  If you are looking to make this a little lighter, omit the butter and add a little extra olive oil.

Ingredients

  • 6 Tilapia Filets
  • 2 lemons sliced in half
  • 3 Tablespoons olive oil
  • 3 Tablespoons of cold butter cut into small cubes
  • 1/3 Cup seasoned breadcrumbs
  • Seasoned Salt
  • Fresh ground pepper
  • ½ Tablespoon dried oregano
  • Pam

Directions

Preheat over to 400 degrees

Cover a cookie sheet with foil.  Spray the sheet with Pam.  Place fish filets on the sheet and drizzle with olive oil. Squeeze the lemons over the fish and season with seasoned salt and pepper.  Sprinkle the breadcrumbs over the fish to coat the fish, then top with small cubes of cut butter. Sprinkle with oregano and place into the oven with the rack on the second highest level.

Bake for around 8 minutes then shut the oven and turn on the broiler and broil for about 2 minutes until golden brown.

Remove fish and top with cold tomato salad and serve.  Click here for the tomato salad recipe.

Grilled Vidalia Onion Burgers with Honey Mustard Sauce

This summer, don’t just throw burgers on the grill from a big sleeve of frozen patties.   Unless you’ve got to feed the neighborhood (which happens from time to time), take 10 extra minutes and whip up these simple, healthy and delicious burgers for a little extra zip in your summer supper.   My husband and I prefer turkey burgers because they have so much more flavor and a lot less fat than beef burgers.  My kids on the other hand prefer the beef so I make the ground beef for them.

I usually grill up a double batch of turkey burgers for me and my husband and we have the leftovers for lunches.  Cold or hot, these are great anytime.  If we are home, I heat the burger in the microwave for about 1 minute and serve over a garden salad.   But, it’s perfect for a lunch on the go too.  I put the burgers over a salad in a Tupperware with some dressing on the side and eat it cold. It keeps well in a cooler for trips to the beach or the park and prevents you from grabbing another fat filled sandwich.

Ingredients:

1 pound Lean Ground Beef or Turkey (not extra lean turkey, which can be too dry)

4 Tablespoons Sweet Vidalia Onion Relish – (My supermarket-Publix-has this in the produce section near the onions and tomatoes)

3 Tablespoons Worcestershire Sauce

1/4 Teaspoon onion powder

4 or 5 slices of cheese (I like pepper jack with this but anything will work)

Pam Grilling Spray

Burger Buns

Lettuce and Tomato

Directions:

Put ground turkey or beef in a bowl. Spread the Worcestershire Sauce and the Vidalia Onion Relish over the meat sprinkle the onion powder and mix well.

Form meat into 4 or 5 large patties and place on a plate in refrigerator for a few minutes while your grill is heating up.

Give the grill a good spray of Pam Grilling Spray and cook burgers about 5 or 6 minutes on each side depending on how thick they are. Add cheese and let it melt for 1 minute.  At this point, your burgers will have cooked about 10-12 minutes and should be cooked through.  Cook fully, but don’t overcook.  Remove and serve on a bun with some lettuce, tomato, and Honey Mustard Sauce.

If you like you can also skip the bun and have the burger over a salad with a little of the sauce as a dressing.

Honey Mustard Sauce:

1 tablespoon fresh lemon juice

2 tablespoons honey

2 tablespoons mayonnaise

2 tablespoons Dijon mustard

salt and pepper to taste

Mix in bowl and refrigerate until ready to use

Cook’s notes:

If you are making these for a big crowd, you can make a double or triple batch of patties ahead of time and refrigerate or freeze until ready to grill. I usually make extra and freeze a few patties for a night when you need a quick meal. You just take them out of the freezer and pop them on the grill.  Voila!
