Easy Summer Chicken Salad Recipe – Simple Idea for any Gathering
Chicken salad is the perfect dish for a party, a boat ride, a picnic or any summer outing. It’a simple classic recipe, but it doesn’t have to be boring. You can have it on a salad if you’re following a ketogenic diet or a paleo diet or make a delicious sandwich, crostini, you name it. There are a million and one ideas for using chicken salad as an entree, side dish or snack. This is my basic, delicious, chicken salad recipe, but feel free to spruce it up any way YOU like, with nuts, or grapes or cranberries, or whatever floats your boat. Here’s hot to make it. Ingredients:
Makes approximately 6 servings
4 cups diced cooked chicken breast
2 stalks celery diced
1/2 of a small white onion, diced
2 tablespoons finely chopped fresh dill
2 tablespoons finely chopped cilantro
1-2 green onions, sliced thin
1 cup full fat mayonnaise
2 tablesopoons Apple Cider Vinegar
1/2 teaspoon of sugar (optional)
Salt and freshly ground black pepper to taste
How to Make it:
Mix all the ingredients in a large bowl until well combined. Refrigerate for an hour or more and serve. For best results make a day before.
