Simple Lemon Butter Broiled Flounder and Asparagus – Simple Healthy Delicious Fish Recipe in a Pinch
If you’ve been following my blog lately, you know we just renovated the Cooking with Sugar kitchen and we’ll be rolling out all new delicious recipes and fun videos this Spring of 2019.  We just got our ovens and sink in place two days ago and I still don’t even know where everything is.  But I just could not eat out one more night after 8 weeks of takeout and dinners out.

So tonight, I picked up a few frozen flounder filets, some fresh asparagus, and a salad mix and made a little magic in the new kitchen.  You can make this in under 10 minutes of prep time and about 15 minutes in the oven at 350 and a minute or two of broiling.

Ingredients:

  • Fresh or Frozen Flounder Filets (thawed per package instructions)
  • Fresh Asparagus Spears
  • One Lemon
  • Butter
  • Old Bay Seasoning
  • Garlic (2 cloves)
  • Salt and Pepper to taste
  • Side salad of your choice
  • Seasoned Panko Bread Crumbs
  • Splash of Prosecco
  • Fresh basil

So this was easy.

Preheat the oven to 350 degrees.

I bought three frozen flounder filets from the store today at the end of the day, and set them on the counter to thaw.  About 40 minutes later, I lined a cookie sheet with heavy duty foil and sprayed a bit of non stick foil.  I laid fish on the pan and sprinkled it with Old Bay, salt and pepper, Panko bread crumbs, the juice of one half lemon, then put a few pads of butter on each with some finely chopped garlic. I sprinkled it with some fresh chopped basil and tossed some cherry tomatoes on it for color.  Put some asparagus spears next to the fish. Then give it a little sprinkle of Prosecco or champagne or white wine.

Place the baking pan in the over at 350 degrees for about 15 minutes and then give it a quick broil for a minute or two for a tiny bit of browning. Remove from oven and plate with a nice salad.
