Haiti Mission (Impossible) – Part Two: The Recipes
OK, so the plan consisted of 8 different entrees. They needed enough for 10 days so I doubled up on the stew and the Bolognese sauce. I figured they wouldn’t mind a repeat of that the following week and that was easy to make more of. I wanted to make dishes high in calories that contained some meat and veggies so they could just heat some rice or pasta, which they had access to, and serve my food over it.
I also had to take into account that I wasn’t cooking in some restaurant kitchen. I had to utilize my stove, oven and crock-pot often simultaneously, to make it all happen. I could have used my mom’s or neighbors’ ovens too but what a hassle that would have been. I also could have just cut up the meat raw and froze it with marinades and done things like that but that would just have created more work to do when they got back from working so hard all day and I didn’t know if that would be practical with the accommodations they are going to have.
So again, here is the list of what I made.
1. Sausage and Peppers with Potatoes
2. Beef stew with carrots, turnips and peas in a beer brown gravy
3. My Grandmothers Italian Meatball Stew with potatoes and Green Beans in a read sauce. (Love this recipe and it made me think of her all day)
4. Chicken Primavera in a light cream sauce
5. Bolognese sauce with mushrooms
6. Pulled pork with a side of mixed veggies
7. Oven baked chicken with veggies
8. Oriental Pork with Broccoli
Part of my planning had to take into account the weight of the food and the coolers. I had two coolers and I had to keep them each under 50 pounds to prevent any over charges in shipping. It is costing a small fortune to get the whole crew to Haiti so every penny they could save is a big help.
I actually had a scale in my kitchen and weighed all the food after I bagged it. Weighing myself all day in my kitchen was probably the worst part of the whole process. I swear I got heavier as the day went on and that wasn’t good for morale!
As I write this, I am fading and not going to be able to provide the full recipes. But, I did take a lot of photos of the foods I prepared and here is just a taste. P.S. I don’t have pictures of all meals in progress and I don’t have pictures of all meals completed but I will have plenty of pictures of the relief team eating all of it next week when I post the recipes.
